Roast Lamb With Ruby Grapefruit


Ruby grapefruit is a delicious addition to the marinade of this succulent lamb dish.

The ingredient of Roast Lamb With Ruby Grapefruit

  • 1 5kg leg of lamb
  • 4 garlic cloves quartered
  • 300g 3 4 cup honey
  • 250mls 1 cup fresh grapefruit juice from ruby or regular grapefruit
  • salt ground black pepper
  • 3 bunches spring onions roots and stems removed
  • 3 ruby grapefruit segmented
  • 375mls 1 1 2 cups massel chicken style liquid stock
  • roasted small potatoes to serve
  • steamed broccoli optional to serve

The Instruction of roast lamb with ruby grapefruit

  • preheat oven to 180u00b0c
  • make 16 shallow slits in the surface of the lamb with a small sharp knife and insert the garlic quarters place the lamb in a roasting pan
  • combine the honey and grapefruit juice in a bowl and stir until smooth brush the lamb generously with the grapefruit juice mixture and sprinkle with salt and pepper
  • roast the lamb in preheated oven for 45 minutes basting with pan juices and grapefruit juice mixture every 15 minutes add the spring onions to the roasting pan and roast for a further 35 minutes basting every 15 minutes add the ruby grapefruit segments to the roasting pan and roast for a further 10 minutes
  • remove pan from the oven and transfer lamb spring onions and grapefruit segments to a warmed platter cover loosely with foil and stand in a warm place for at least 10 minutes
  • meanwhile skim as much fat as possible from the surface of the juices remaining in the roasting pan stir in the stock and season with salt and pepper bring to the boil on the stove top then reduce heat and simmer uncovered stirring often for 5 minutes or until reduced by 1 3 serve the roast lamb with the spring onions and grapefruit sauce accompany with potatoes and broccoli if desired
