- 2 eggs lightly whisked
- 25g 1 4 cup dried packaged breadcrumbs
- 3 garlic cloves crushed
- 2 tablespoons chopped fresh coriander
- 2 teaspoons ground cumin
- 75g danish feta crumbled
- 1 tablespoon olive oil
- 1 1 2 tablespoons tomato paste
- 100g 3 4 cup finely grated mozzarella
- 125g cherry tomatoes halved
- 60g baby spinach leaves
- fresh coriander leaves to serve

- preheat oven to 220c use your hands to mix the mince egg breadcrumbs garlic coriander cumin and one third of the feta in a bowl until well combined season
- heat the oil in an ovenproof heavy based non stick frying pan over medium high heat remove from heat add mince mixture use a spatula to press to cover the base smooth the surface place over medium heat spread lamb mixture with the tomato paste top with the mozzarella tomato and remaining feta
- bake for 10 15 minutes or until cooked through and golden serve with spinach and coriander leaves
